Hawaiian Dog (BB Wolf copycat)

 

Ingredients

4 All beef hot dogs*

4 hot dog buns

2 1-inch slices spam

Pineapple Salsa

(5) 1-inch slices of fresh cut pineapple

1 red bell pepper, halved lengthwise, seeds and stem removed

1 jalapeno pepper

1 half lime

1 T. extra virgin olive oil, plus spray for grilling

1 t. honey

1/2 t. ground cumin (to taste)

3/4 t. salt

1/2 t. black pepper

Teriyaki Sauce

1 cup water

6 T. packed brown sugar

1/4 cup soy sauce**

2 T. honey

2 large clove garlic, finely minced

1/2 t. ground ginger

1 t. corn starch

2 T. water

*I used Oscar Meyer Classic All Beef Hot Dogs as these were voted best commercial dog on several different sites

**You can use coconut aminos instead of soy sauce

Instructions

Pineapple salsa

Lightly brush or spray pineapple slices, bell and jalapeno peppers and the cut side of the lime halves with high heat oil. Place over medium-high flame/heat on oiled grill. Season with a sprinkle of salt and pepper. Cook until grill marks appear on the limes and pineapple, and the peppers soften (approx 3-4 minutes total for limes and per side for others).

Cut grilled jalapeno in half lenghtwise and remove seeds if you don’t want it too spicy. Chop the pineapple and peppers into bite-sized pieces.

In a medium bowl, combine all ingredients from lime through black pepper. Once cohesive, add grilled pineapple and peppers.

Cover with a lid or plastic wrap and allow the flavors to come together for at least 30 minutes before serving.

Terriyaki Sauce

In a medium sauce pan over medium heat, combine water through ginger and bring it to a low simmer.

In a small bowl, combine corn starch and 2 T. water and mix to make a slurry. Add the mix to the sauce pan.

Heat until your desired thickness is reached, keeping in mind that it will thicken further as it cools. Don’t cook more than 2 minutes. If it gets too thick, add small amounts of water until you like the consistency.

Preparation

Grill hot dogs to your liking, grill spam to get nice grill marks on both sides.

To assemble, place your hot dog in its bun, top with spam, pineapple salsa and teriyaki sauce.
